When things are rough, it helps to nourish your body with foods that have a high-nutrient content while also tasting damn delicious. This is fact!
I’ve been making the following green bean & spinach & rice mixture for three days straight because it’s filled with veggies and also makes me feel like I’m eating a restaurant-quality dish when it’s really a dumbass-proof recipe!
Green Bean & Rice Medley
Serves 4 (or, if you’re like me and SUPER hungry (heh), 2 servings)
Ingredients
- 1 tbsp coconut oil
- 1 bag (1 lb) frozen organic green beans (I use Trader Joe’s brand; not the French-cut type though)
- 2 cups fresh spinach
- 1 cup cooked brown rice (or you can microwave a packet of frozen brown rice from Trader Joe’s single servings and use half a bag, which is 1 cup) [you can use more rice if you want - i.e. just double it and use whole bag from TJ's, if you'd like; I just wanted the veggies to be the center of this dish, but I get if ya want more rice
]
- 1-2 tbsp Soyaki (from Trader Joe’s though I imagine any teriyaki or soy sauce will work well here; if you’re gluten-free, you can use Blaze Tamari sauce or Organicville’s Island Teriyaki)
Instructions
- Place coconut oil in a saute pan; heat over medium heat. Once oil has melted fully, add spinach and begin sauteing
- Meanwhile, add entire bag of green beans to a microwave-safe dish/container, add 2 tbsp water, and heat for 3-4 minutes
- Add green beans to saute pan.
- Once green beans & spinach are fully cooked (about 5 minutes), add in cooked rice and Soyaki sauce. Mix well.
- Turn off heat and enjoy!
